Inspiration for Kissing Kin?

Loquats and a Dog Named Teddy!

It’s funny what twists of fate trigger our imaginations. In my case, it was a gift of loquats, something I did not recognize and had never eaten. Loquats are yellow, pear-shaped fruit that (I soon learned) taste like an apricot-cherry medley with a citrus tang.

Several springs ago, a neighbor had two loquat trees that overproduced, and she shared her bounty with the neighborhood. (Sadly, the following winter froze out the trees.) But how I enjoyed that spring and those loquats! So much so, that I wove the loquats (and the neighbor’s dog Teddy) into Kissing Kin.

Much of the story’s action takes place beneath and around the tree, and Teddy plays an integral part in Kissing Kin as the following short scene demonstrates:

“In fact, I picked the first loquats for tonight’s dinner.”

“The first fruits.” His lips twitched in a wry smile.

As I recalled our kiss, a shudder slid down my spine. We’re the fruit of Marianna and Mateo’s love…I took a deep breath, refocusing. “Since it’s my turn to cook, I thought we could eat al fresca and celebrate spring with a chicken with honey-loquat glaze.”

“It’s a date.”

Is it?

That evening, as we finished dinner on the new patio, a high-pitched whine broke the stillness.

My ears perking, I scanned the vineyard.

A small mound of dried grass and burrs barked.

“Teddy?”

CHICKEN WITH HONEY-LOQUAT GLAZE

[Makes 4 Servings]

Ingredients :

½ cup honey
3 tablespoons soy sauce
3 cups loquats, seeded and quartered (find at farmers markets)
4 tablespoons ginger, minced, to taste
4 tablespoons butter
4 chicken breasts, boned and skinned
Salt, to taste
Ground black pepper, to taste

Directions:

Combine the honey, soy sauce, loquats, ginger, and butter in a medium saucepan. Simmer, covered, for five minutes, or until loquats soften.

Purée the loquat mixture in a blender or food processor, pulsing until the consistency of applesauce. Set the mixture aside.

Preheat the grill. Season the chicken breasts with salt and pepper. Grill about five minutes per side, or until done, showing an internal temperature of 165 degrees F.

* (Or season the chicken and sear in butter in a skillet until browned. Transfer the chicken to a baking pan and bake at 350 degrees F for thirty minutes, or until done, showing an internal temperature of 165 degrees F.)

Add the chicken to the loquat purée in a medium skillet. Stir over low heat, simmering for 5-10 minutes, or until chicken is warmed through and evenly coated with the loquat purée.

* Optional: Serve over rice.
