This no bake layered Chocolate Coconut Fudge has all the creamy texture and decadent flavor you crave but is made with real-food ingredients. It’s dairy free, grain free, Paleo, Vegan, and absolutely dreamy for any chocolate lover.

I’m taking the risk of sounding like a broken record, but, I’m asking you to bond with me today over our shared love for chocolate.

I’m assuming you have a heart and soul and therefore love chocolate. Apologies to anyone who genuinely does not like chocolate but is still a good person (I mean really?) but, I just can’t bring myself to trust someone who says they’re not into it. You have an agenda perhaps – some sort of desire to rise above the primal human urge to stuff our faces with delicious things. What’s next, you don’t like sweatpants?

It’s not working for me. I don’t buy it – you are clearly trying to hide something.

So much for an apology.

Anyway, if you’re ready to bond I’m ready to chat. I love chocolate, period. If I’m going to be dead honest with y’all, I don’tonlylust after dark chocolate either – my taste in chocolate does not discriminate.

White chocolate was my favorite as a kid (I remember the first time I tried white chocolate and my universe was flipped inside out) and I know some people say it’s not even chocolate at all (maybe just keep it to yourself for now), but basically you could not present me with a chocolate that I would turn down.

Layered Chocolate Coconut Fudge {Paleo & Vegan} (2)Even the time we tasted raw unsweetened chocolate in first grade (some might consider this child abuse nowadays) to illustrate what “bitter” meant, I was not turned off, only moreintrigued, and left the experience with a greater appreciation for all the possibilities that exist with chocolate. If chocolate is not somewhere in the top 5 slots of your “life’s greatest pleasures” list, then maybe you need to reevaluate what you consider “pleasure” in the first place.

You know I’m kidding and don’t really hate you if you’re not a chocolate person, right? I’ll move onto the second part of this recipe that makes me want to eat it constantly then – coconut. There is simply nothing better than the taste and texture of the coconut/chocolate candy combo.

Think mounds bars or macaroonsor almond joy bars or even just a box ofassorted chocolates. The coconut wins! Although I love caramel too, but if I had to pick one I’d go coconut. This may or may not have been a small deciding factor in whether or not I could do this whole Paleo thing longterm – I can’t lie – I don’t hate all the coconut!

So, to conclude, I just went on and on and told you basically nothing except that I like chocolate and coconut – oops. How can I make this up to you? By giving you the recipe! Okay, here it goes:

Ingredients

Chocolate Layer

  • 1and 1/2 cups Enjoy Life dark chocolate morselsor preferred dairy free brand
  • 1/4cupcoconut oil
  • 1/4cup + 2 Tbsp thick creamy coconut milk*
  • 1tsppure vanilla extract

Coconut Layer

Top Chocolate Drizzle

Instructions

  1. Line an 8 x 8 inch pan or dish with parchment paper with some overlapping on the sides

  2. Make the chocolate layer first: In a small saucepan over very low heat, melt dark morsels and coconut oil while stirring continuously. Stir in coconut milk and remove from heat, then stir in the vanilla.

  3. Spread the chocolate mixture in the parchment lined dish using a spatula to scrape out every drop. Chill in the freezer while you make the coconut layer.

  4. To make the coconut layer, mix all ingredients together in a medium bowl until fully combined, then prepare the top chocolate drizzle by melting the chocolate chips and coconut oil over very low heat while stirring.

  5. Sprinkle the coconut layer evenly over the thickened chocolate layer (shouldn't be completely set or the two layers will separate as they cool) and then drizzle the melted chocolate/coconut oil over the top. Put in the freezer for 10 mins to set and then cut into squares to serve!

  6. Store leftovers in either the freezer or refrigerator. The freezer will give it more of a candy bar consistency while the fridge will make it more like fudge.

Recipe Notes

*I refrigerated my can of coconut milk so the water and cream separate, then discarded half the water and blended the rest together for a thick, creamy coconut milk.

    I will never understand anyone who doesn’t like chocolate or tells me they don’t care for sweet desserts. makes no sense and they are missing out in life! ha. I never loved white chocolate but over the years learned I really like dark chocolate so now a milk chocolate will taste funny but hey, I don’t turn a good dessert down, no matter which chocolate it’s made with

    We can totally bond over our love for chocolate! Especially since I loved white chocolate when I was little too and now I just keep loving it darker and darker. I’ve always been a coconut fan too, which I feel is a little more controversial, but these look like my paleo dream come true! They look so rich and magical, pinning!

      Yup that’s me too, even regular dark chocolate or semi sweet tastes really sweet to me and I like it rich, but, who am I kidding – I’d still eat the super sweet stuff 🙂

    First time I had chocolate? I was less than a week old. My brother had a Mrs. Field’s Chocolate chip cookie, and wanted to share. It was bigger than my head! I started earlier, and the love remains strong!

    It is hard to admit but no, I do not eat chocolate 😉 I do have an agenda : “some sort of desire to” avoid hives at all costs… because I’m allergic to cocoa. hahah But rest assured that I do love sweatpants… as long as they are not covered in chocolate 😉 I do like caramel and coconut a lot but salty treats are my favorites.

    Hi Michelle this looks delish. I’m on the other side of the world in Australia and am going to use a block of dark chocolate as we don’t have Enjoy life choc morsels. How much would 1.5 cups of the morsels be in ounces ( or grams)?

      Okay, I hope I’m not way off but after a quick search I’m thinking about 8-9oz or 225-250 grams. I think the difference won’t be huge in texture especially if you wind up freezing them, but let me know!

    I’ve been waiting for this recipe for a week – I think it is perfect for Passover (maybe? I’m not religious, I have no idea, but that’s when you do macaroons) and involves dark chocolate which I love. Sorry, I’m one of those “white chocolate isn’t chocolate” people. I love the dark chocolate, I love vanilla…just not in between!

    I’m spending Easter with a friend and my brother this year which should be fun! I don’t have the best access to grocery stores so sadly there won’t be any baking for me. But when I go home from school my family ends up buried in all the things I’ve been pinning and dreaming up. I don’t think they mind it too much haha…
    I think people who don’t like chocolate are kind of shady…like could you really trust them in a desperate situation? I have a few friends with allergies/sensitivities to chocolate who end up with migraines. I can’t imagine how sad that must be.

    Oh my gosh! I am new to Paleo and this recipe looks AMAZING! Getting the ingredients to make tomorrow! Yay! I started Paleo in January and I am able to have a little off the paleo menu, but typically I have to be very careful. I love chocolate and I was so scared when starting this journey that again I could have to give it up. I had to as a child due to ocular migraines…thank goodness I am still able to have it now! Whew!       Do you mean for the top drizzle? Since the chocolate chips are sweetened and also melt a certain way the flavor and texture would change. If you wanted to experiment, I’d mix and melt coconut oil in with the cacao, let me know if you try it 🙂

        oops sorry I meant for the bottom layer. I figured the powder won’t melt and re-harden the same way as the cacao powder…I’ve made the fudge a couple times with coconut butter rather than oil and the cacao and that was great…might do a mix and match. My challenge is getting the chocolate morsels that are sugar free (my new diet)…I live in the Caribbean and there are limited options. Will do a little experimenting and see what happens! Thanks 🙂

          Now I want to try it with coconut butter! I think if you mixed the powder with coconut cream or oil it could work, without that it would likely be too chalky, but not entirely sure.

      You can make your own chocolate chunks using this recipe, which sweetens the chocolate with maple syrup: http://www.bakerita.com/paleo-chocolate-chunks/ I’m not sure exactly how it will work with this recipe since I haven’t attempted it, but it’s a good option for homemade chocolate using an unrefined sweetener. Hope this helps!

      Hi! It’s actually 6 Tbsp total, which is 1/4 cup + 2 Tbsp. It’s an older recipe and didn’t convert properly when I switched plugins, I originally had the 1/4 cup + 2 tbsp in parentheses I think – sorry for the confusion 🙂
